Activities at South Africa's national parks

Adventure activities such as river rafting, bungee jumping and mountain biking at Tsitsikamma and Augrabies.
Beach at Tsitsikamma, Knysna/Wilderness park, Addo Elephant and Agulhas, Table Mountain National park and Namaqua and West Coast.
Birding in all parks.
Canoeing at Golden Gate, Knysna and Tsitsikamma, Nature's Valley and Wilderness.

Fishing permits will be available at Agulhas and Bontebok, Addo Elephant,Ai-Ais/Richtersveld and West Coast. (Note: fishing has been stopped at Tsitsikamma due to a drastic decline of rocky shoreline species.)
Wild flower season is at its height during August and September and viewed in Namaqua and Agulhas, Bontebok, West Coast and Wilderness.
Game viewing at Kruger national park and many other parks too.
Golf at Kruger (Skukuza).
Guided game drives and walks at many parks. 
Hikes, walks and trails at most parks.
Horse riding can be enjoyed in Addo Elephant, Golden Gate and Mountain Zebra.
KNP Wilderness Trails
Motorcycling can be done in Agulhas National Park, Golden Gate Highlands National Park, Karoo National Park, Knysna National Lake Area and Namaqua National Park, Tankwa Karoo National Park and Tsitsikamma National Park, West Coast National Park and Wilderness National Park. Important: enquire beforehand on whether permission is needed.
Otter trail at Garden route national park and Tsitsikamma.
Picnic sites in all the parks.
Restaurants and cafeterias at most parks.
Sailing at Wilderness, Knysna and West Coast.
Shops in all parks.
Tennis can be enjoyed at Golden Gate.
Whale watching at Wilderness, Agulhas and Tsitsikamma, Addo Elephant, Table Mountain and West Coast.
